| Dear Friends,
As "Old Man Winter" unhands us from his icy grasp and the days begin to grow longer as the sun stretches its reach, I'm reminded that it's time to prepare for one of the first harbingers of spring -- a St. Patrick's Day celebration.
St. Patrick's Day has become an event for all to enjoy, with drink, song, dance and of course food. As the saying goes, "Everybody's Irish on St. Patrick's Day", so...get ready to don your best duds of emerald green, listen to some lilting tunes, and make a meal, to fill your friends and family with mirth and memories.
I have included some of my favorite recipes for celebrating "the wearin' of the green." I've also included a recipe for a Brine for Corning Fresh Beef. It's not at all difficult, and gives you the added advantage of using the fresh brisket of your choice, and adjusting the amount of spices to your own personal taste.
Good Cooking and Sláinte,
Chef Will Cook
