Salmon Steaks Roasted with Leeks
4 large leeks, white part only, washed and cut in 1/4" slices
2 Tablespoons water
1 Tablespoon olive oil
1 1/2 teaspoons finely shredded lemon zest
2 teaspoons chopped fresh dill
4 salmon steaks, 6 to 8 oz. each
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 Tablespoons fresh lemon juice
lemon slices and fresh dill garnish
Preheat oven to 425°F. In an oven-proof casserole combine leeks, water, olive oil, lemon zest, and dill. Cover with aluminum foil and bake 25 minutes, stirring once halfway through. Remove from the oven, push leeks aside and add steaks. Spoon leeks over the salmon, season with salt and pepper and sprinkle with lemon juice. Return to oven and bake uncovered until salmon is opaque, about 12 to 15 minutes. To serve, spoon leeks, divided evenly onto 4 plates, and top with salmon steaks, adding garnish.
