Guinness Cake (6-8 slices)

1 C. raisins
1/4 C. candied ginger, finely chopped
1/2 C. Guinness stout
1/2 C. butter
1 C. brown sugar
3 eggs, beaten
2 1/4 C. self-rising flour
1/2 t. pumpkin pie spice (cinnamon, nutmeg, allspice, cloves)
1/8 t. salt

Soak the raisins and candied ginger in the stout, for at least 4 hours prior to baking.
Preheat the oven to 325º F. Cream the butter and sugar until smooth. Beat in eggs. Add the flour, salt, and pie spice and mix thoroughly. Add the stout and fruit and blend through. Grease an 8" cake pan and pour in batter. Bake approximately 1 hour or until toothpick inserted in center comes out clean. Cool in pan for 5 minutes, remove and completely cool on wire rack. Dust with confectioner's sugar before serving, or serve with sweetened whipped cream.
